We began with a visit to ‘La Piscine’, a modern Art gallery based in an old swimming bath. Then we went to ‘les marchés de Noël’, the Lille Christmas markets which offered a variety of local and artisan produce and with a spin on the big wheel for those who fancied it. We then headed to a local restaurant where we ate some tasty savoury and sweet Flammekueches.  After a full night sleep at the friendly youth hostel of Lille we watched an experienced chef demonstrate how to make delicious waffles and had a tasting session at ‘La Gaufre du Pays Flamand’, a vintage shop focused on keeping the traditional waffle alive.
